Kale and Spinach Quinoa
Ingredients
• 1 1/2 cups Quinoa and ½ cup Basmati rice
• 1 cup chopped kale
• 1 cup chopped spinach
• 1 medium onion (chopped)
• 2 tsp. ginger and garlic (finely chopped)
• 2 bay leaves
• 1 tsp cumin seeds
• 1 tsp. garam masala
• 1 tsp. coriander powder
• sea salt a/c to taste
• 2 tbsp Ghee
Method
• Soak rice and quinoa in water for 4 to 5 hours, wash and keep aside.
• Heat ghee in a heavy bottom pan. Add cumin seeds and bay leaves.
• Add onions, roast a little add ginger garlic paste, roast till golden brown.
• Add chopped spinach and kale. Cook till leaves become soft. Add salt, coriander powder and garam masala.
• Add quinoa and rice. Mix well and add 3 cups of water.
• Cook till quinoa is done.
Serve hot, can be just by itself or with yogurt.
