Breakfast Ideas!!!!

I am looking for breakfast ideas that do not have eggs or meat in them. Quick and something to help me getting ready for the day! Thanks!

Breakfast is such an important meal of the day. Make sure you're getting enough protein, especially at breakfast. Without eggs or meat, this means beans, nuts and seeds for sure. You'll need to add more protein to the quinoa porridge breakfast.

Rice and Greens and Beans
2 Tbsp ghee, olive oil or coconut oil, divided
1/2 small red onion, chopped
1/4 red pepper, chopped
1/2 zucchini, sliced in half-rounds
3 artichoke hearts, quartered
1 small tomato, chopped or a handful of grape/cherry tomatoes, quartered
3/4 cup cooked brown rice, re-heated
1/4 cup of beans (black, red, or pinto)
1/4-1/2 avocado, chopped
1 Tbsp hemp seeds or sesame seeds or try 3-Seed Gomasio
In a skillet heat 1 Tbsp oil, then add onion, red pepper and zucchini and sauté over medium-high heat about 5-7 minutes. Add artichoke hearts and tomatoes, reduce heat to medium and continue to sauté for another 5 minutes covered. Reheat rice and beans. Then, place the veggies in a serving bowl over the rice/beans. Top with avocado and seeds.
Serves 1.

Quinoa Porridge
1/4 cup quinoa, rinsed (or you can use 1/2 cup of leftover, cooked quinoa)
1/4 cup millet or amaranth
1/4 cup amaranth or steel-cut oats (oats are not recommended for gluten sensitive)
1 1/2 cups water
1/2 cup coconut milk OR 1/2 cup almond milk
1/4 cup walnuts, chopped (can also use pecans, almonds, pumpkin seeds and/or sunflower seeds)
handful of raisins
The night before, add all grains and the water to a saucepan. Add a couple of drops of vinegar or lemon juice, cover and let sit overnight. Add any dried fruit ingredients at this time. In the morning, cover and cook on medium-low heat until all the water is absorbed (about 15 minutes). Add either the coconut or almond milk and continue to cook over low to medium heat. Stir frequently so it doesn’t burn and cook for an additional 5 minutes until grains are soft, but still chewy. Remove from heat. Add any combination of the remaining optional ingredients to suit your taste and serve. Serves 4.
Optional ingredients:
1/4 cup dried apricots, chopped and/or 2 Tbsp dried coconut, shredded and/or 1/4 cup fresh fruit, chopped (strawberries, raspberries, blueberries, apples, pear) and/or 2 tsp cinnamon, ground and/or 2 Tbsp lecithin and/or 1 scoop protein powder and/or additional almond/coconut milk.

I am a huge fan of smoothies because they are quick & easy. Plus you get some fruit and vegetables into your diet first thing in the morning. Here are a couple of my favorite smoothie recipes:
Kale & Mango smoothie:
3/4 unsweetened almond milk or coconut milk

1/4 cup coconut water

1 leaf lacinato kale (remove leaf from stem)

1/4 Tbsp almond butter (or 1/4 avocado)

1/4 cup frozen mango

2 Tbsp ground flax seed

3-5 ice cubes

Optional to add 1-2 scoops of vanilla protein powder.

Berry & Mango Smoothie

1 cup unsweetened almond or coconut milk

1/4 cup frozen mixed berries

1/4 cup frozen mangos

2 tbsps ground flaxseed

1 tbsp almond butter

3-5 ice cubes

optional 1-2 scoops of vanilla protein powder (i like egg white protein best- MRM is a great brand or Jay Robb)

I also like slow cooked oats with some fun and tasty toppings. I use trader joes steel cut Irish oats (they come in a white tin)

Bring 2 cups unsweetened almond milk and 2 cups water to a boil. Pour in 1 cup of oats. Once boiling again, turn down to a low heat and stir occasionally until oat are a porridge-like texture.
This makes 4 portions of oatmeal so I keep mine in the fridge and simply scoop out some oatmeal add a little bit of almond milk in a pot to heat it up each morning.
(serving size is 1/2 cup cooked oats)

I usually add some cinnamon and then top my oats of with slivered almonds and some berries. You can get creative with your toppings. Peanut butter and almond butter are also great add-ins.

Hi
I am trying to make new breakfast recipes as well, and I vary, sometimes I make oatmeal, and other times I make Brown rice tortilla filled with mixed veggies, instead of coffee I drink Chai tea with almond milk. Try this Oatmeal recipe, I really love it!

1 cup almond milk, let it seem in low fire with a cinnamon stick,
1 finely chopped pear
1 tea spoon of brown rice syrup
a dash of nutmeg
a dash of cinnamon
a dash of powder clove
and 3 tbs of oat
Do not let if bubble too much, when it's almost thick but still liquid you can turn off the burner. Let it cool a little and enjoy it!  ;)
