I would reccomend cooking in a little bit of water or broth instead of oil. That is how I cook all the time and it works great.  It then sort of steams the stir fry or whatever  you are cooking instead of frying it.  You can do it at a high heat and it really feels like you are cooking/sauteing the same way you would with high heat oil (which any oil will have some reaction to heat)  Also if you are a big fan of olive oil...consider putting it on after you cook the food.  It does give great flavor and the illusion that it was cooked in it :)  Hope that helps.

I agree with Becky, that cooking with a few tablespoons of vegetable broth (I like using Bauman's Mineral Broth recipe) for a short amount of time works great.  After draining any extra broth, add some olive oil, lemon juice, garlic, spices to taste; it's delicious.
One other thing, remember that at least 80% of canola has been genetically modified; I wouldn't recommend it, unless it was organic.
