"Ecstatic Salad"
for each serving:
1/2 cup chopped Red Cabbage
1/2 cup chopped Green Cabbage
1/2 cup Mixed Spring Greens
1/2 cup Arugula
1/2 grated Carrot
1/4 cup chopped Red or Yellow Pepper
1/2 chopped avocado
1/4 cup pre-soaked sunflower seeds (can be sweetened by adding raw honey if desired)
2 TBLSP Coconut cream (either added into salad in small quantities, or creamed and then blended into dressing
Dressing
Equal parts Cold Pressed Organic Olive Oil and Raw Apple Cider Vinegar
1 garlic clove, minced or chopped
2 TBLSP grated ginger
1 tsp Sauce Sauce (optional)
